De wijnen van Brewer-Clifton vertegenwoordigen de essentie van de beste wijngaarden in de Santa Rita Hills-regio en richten zich op de productie van Chardonnay en Pinot Noir met een individuele wijngaardaanduiding, afkomstig van zorgvuldig geselecteerde wijngaarden in de SRH-appellatie.
Zoals gebruikelijk bij Gregs wijnen, worden deze wijnen niet ontsteeld en worden ze geheel gerijpt in neutrale vaten. De meeste Chardonnays hebben een alcoholpercentage van ongeveer 14%, de Pinot Noirs tussen de 14% en 14,5%, en ze hebben allemaal unieke karakters en minimaal een decennium aan houdbaarheid.

Zoals lezers weten, zien de Brewer-Clifton-wijnen helemaal geen nieuw eikenhout. “Ik wil dat alle expressie en decadentie van buitenaf komen, dus gebruik ik zeer oude vaten en roer ik niet voor Chardonnay,” legt Greg uit. “Chardonnay wordt geperst met hele trossen en de Pinot Noirs worden gefermenteerd met hele trossen, van 70% tot 100% voor de single-vineyard-varianten. Voor mij zijn de stelen een soort korset. We hebben hier zoveel fruit. Ik heb 25 jaar met stelen gewerkt om ze te kaderen en te korsetteren, dus we gebruiken ze om ze te vormen en te liften.”
